Goats Cheese & Pesto Parcels

These parcels are so easy to make, I don't know why it's been so long since I last made them. Great midweek meal because you're eating them after 30 mins (inc prep). I have only tried green pesto but I'm wondering if red pesto would also work, don't see why not.

Ideal if you are vegetarian too, or if like me, you like a few meat free meals during the week.


Why not give them a try. You could even make tiny ones as canapes if you are having friends round. 5 ingredients, you can't go wrong!

The Recipe Ingredients

1 pack of ready rolled puff pastry

1 tub green pesto

1 small pack of goats cheese (whichever variety you prefer, without rind)

1 egg for glazing

2 tsp grated Parmesan cheese

Method

Unroll the puff pastry and cut in half (vertically) - if you want to make smaller versions just make smaller pastry pieces but make sure you have enough pastry to bring into a parcel.


Add the goats cheese to the centre of each piece of pastry. Next, add the pesto on top of the goats cheese. Beat the egg and brush around the edges of the pastry, then bring up the corners and fold over to make a parcel shape. Glaze each parcel with the egg wash and sprinkle with the parmesan.

Place each parcel on a baking tray covered with greaseproof paper.

Bake in a pre heated oven Gas 4 (180C) for 15-18 mins until golden.


Enjoy with steamed veg, salad or whatever takes your fancy! Enjoy the gooey centre :-)
