It's nice to try new things especially at breakfast, as we usually get stuck in a rut with what to have and tend to stick with the same things day after day. These bagels are an ideal alternative for breakfast (especially for a weekend breakfast or if you have guests staying that you want to impress) and even make a nice brunch or lunch too!
I thought I'd try this Italian influence, after a trip to Italy inspired me to try different combinations of flavours with everyday items such as a bagel. Tomatoes & mozzarella are a heavenly match and used a lot as a combination in Italy, so I thought why not try it on a bagel - and it works!
Recipe Ingredients
1 bagel sliced in half
1 vine tomato sliced
1 ball of mozzarella sliced
couple of basil leaves
splash of extra virgin olive oil
Method
Lightly toast the bagel. Put the sliced tomato on each half then add the sliced mozzarella and place under the grill until the mozzarella has melted.
Remove from the grill, drizzle with the extra virgin olive oil, tear the basil leaves and garnish.
