I really don't like to waste food, which means sometimes I try to think of new ideas and recipes to use up items I have in my fridge. On this occasion it was a bunch of spinach, a lemon and a few florets of broccoli .... I had a flash of inspiration and voila, I had come up with a really tasty pasta dish which I'm sure you'll love. It only takes 10 mins and has a handful of ingredients, plus for those of you who are vegetarian, it is ideal. It is also a very economical dish too - result!
The Recipe Ingredients
A handful of spinach leaves
Few florets of broccoli cut into small pieces
1/2 lemon
1 tbsp olive oil (I used infused lemon oil)
1 small shallot finely chopped
1 clove of garlic finely chopped
125g pasta (I used Orzo)
The Method
Put your pasta on to cook in salted boiling water and cook to packet instructions.
Whilst the pasta is cooking put the olive oil in a small frying pan on a low/medium heat and fry the shallot and garlic for a few mins till soft and starting to colour. Add the broccoli and some grated lemon rind to the pan and stir, then after a couple of mins add the spinach and the juice from the lemon. The spinach will wilt down quite quickly. I chopped mine but you can put it in whole, it's up to you.
Add 2 tbsp of pasta water to the pan and stir ..... then drain and add the cooked pasta and stir together to make sure it's all mixed together. Serve immediately.
Serve with a sprinkling of parmesan if you wish and accompany with a green salad or garlic bread. Enjoy!
