Slow-cooked Beef & Bean Stew

When Winter sets in the slow cooker really comes into its own. You don't have to do much yet the reward is sooooo good! I bought my little slow cooker from Wilko for £9.99 - it has certainly been money well spent. Here's one of my "go to" recipes:


The Recipe Ingredients

250g Braising/stewing steak

2 carrots

1 medium onion

1 small tin of butter beans (you can use canellini or leave out entirely)

1 clove garlic

1 bay leaf

1 pint of beef stock (I use a stock cube)

1tbsp tomato puree

1 tsp mixed herbs

Salt and Pepper



A perfect "Winter Warmer"

Method

Switch your slow cooker on and set to high (I find it heats the pot nicely before you start adding your ingredients)

Peel and chop your onion and garlic finely and peel and slice your carrots and add to the pot along with the cubes of beef and butter beans.

Give it a good stir.

Add the tomato puree, mixed herbs, bay leaf, salt & pepper then pour the stock on top and give it a good stir to make sure everything is well mixed up.


Set your slow cooker to low and leave for at least 6 hrs (I usually aim for 8 hrs cooking)

Give it a stir every now and then if you're about to do so.


If it hasn't thickened to your desired taste (we're all different) mix together a tbsp of cornflour with a tbsp spoon of water in a cup then add this to the pot and stir. Leave to thicken for 5 mins before serving.


I usually serve with mashed potatoes but the choice is entirely yours - enjoy!!
