These cookies only take about 15 minutes from start to finish. You can whip them up in no time, as all the ingredients bar one go in to the mixing bowl at the same time. I love baking like this. You can of course add chopped nuts instead of choc chunks, that is up to you.
When you look at the ingredient list you will see that they aren't as "unhealthy" as you might have first thought. No regular flour, butter or sugar in this recipe!
The Recipe Ingredients
1 cup of ground almonds
1/4 cup of coconut flour
3 tbsp oil (I use Vegetable)
3 tbsp runny honey
2 tbsp peanut butter
1 cap vanilla extract
1 tsp baking powder
handful choc chunks
Method
Add all the ingredients (apart from the choc chunks) to a mixing bowl and mix on a medium speed for a few mins till you get a mixture that resembles large breadcrumbs. At this point add in the choc chunks and fold in with a spoon.
Scoop out some mixture, about the size of a golf ball, and roll in your hands then flatten into a cookie shape and place on a baking tray lined with greaseproof paper. Repeat this until you have used all your mixture. You should get about 8 cookies from this recipe.
Place in a pre-heated oven on Gas 4 (Gas 3 if fan assisted oven) for 10 mins.
Keep an eye on them and remove when they start to colour. They may feel soft when they come out of the oven but on cooling they will firm up.
Place on a wire rack to cool. When cooled you can store in a lock & lock type container to keep fresh. If you can stop from eating them that is!
