Keema Curry

As you have probably gathered, I'm drawn to food with a bit of flavour, so here is another tasty curry recipe. Something different to do with your minced beef other than chilli and bolognese. It's mild so suitable for everyone and very easy to make.

This recipe makes enough for 4 so I cook this amount and pop a few portions in the freezer.


The Recipe Ingredients

1 tbsp vegetable oil

1 onion finely chopped

1 clove garlic finely chopped

1 inch piece fresh ginger peeled and finely chopped

500g minced beef

1 tbsp mild curry powder

2 tbsp tomato puree

500ml beef stock using 1 beef stock cube

1 tin chopped tomatoes

1 tbsp ketchup

50g frozen garden peas

chopped coriander or flat leaf parsley to garnish


Method

Add the oil to a deep frying pan and add the onion, garlic and ginger. Fry on a medium heat for 5 mins until softened.

Add the mince and fry for 6-7 mins stirring occasionally till brown all over. Stir in the curry powder and cook for a further minute.

Add the tomato puree, stock, ketchup and chopped tomatoes and mix well. Simmer for 20 mins until the liquid has reduced by half and thickened. About 5 mins before the end of the cooking time at the peas. Sprinkle with coriander or parsley (whichever you prefer) - enjoy!!


Serve it with rice and naan bread.
