I used to do a fair bit of baking but have somehow gotten out of the habit, so I thought I'd do a few biscuit, cookie type recipes and so this is the first of many to come. This shortbread recipe is so easy to make, even if you have never baked in your life before, as it's only 3 ingredients! What could be simpler. Ask your friends over for coffee and watch their faces when you offer them homemade biscuits!
The Recipe Ingredients
150g Plain flour
100g butter, cold and cubed (I used Stork)
50g caster sugar (plus little extra for sprinkling)
Method
Put all the ingredients into a mixing bowl and work together (I used my hands but you can use a mixer) When they resemble breadcrumbs press together to form a dough.
Let it rest in the fridge for 20 mins.
Pre-heat the oven on Gas 3 (160C)
Dust a little flour onto your worktop and with a rolling pin roll out the dough until it is all about the thickness of a pound coin.
Trim round the edges to make a square shape and then cut into fingers and place on greaseproof paper on a baking tray.
Don't throw the bits you trimmed off away, gather those up and make into little rounds (see pic above)
With a fork make little indentations along each shortbread finger and then sprinkle a little caster sugar along each one.
Bake in the oven for 10 -12 mins just until they start to change colour.
Place on a wire rack to cool.
Once cool pop them in an airtight container.
The little shortbread rounds are a perfect companion to a mid morning coffee!
