I'm very fond of Chinese food but so often I get that almost floury aftertaste in my mouth (think it's the MSG) and if you have too, why not make it yourself! This is simple, quick and very tasty!
The Recipe Ingredients
1 chicken fillet
2 spring onions finely chopped
1/2 a small tin of sweetcorn (in water)
A couple of handfuls of frozen peas (cook first)
1 egg beaten
100g of cooked long grain rice (brown or wild if you prefer. I've even tried it with a pouch of Tilda and that's ok too)
A dash of soy sauce
1 tbsp sesame oil (use sunflower if you prefer)
Method
Put a medium heat under a good non-stick pan and add the beaten egg, stir all the time until it goes like scrambled eggs. Remove from the pan and set aside till later.
Add the oil to the pan and keep the heat at medium.
Chop the chicken into cubes and add to the pan, cook for a few mins, turning the chicken over until the chicken has cooked through.
Add the spring onions and stir for 1 min.
Add the cooked rice, sweetcorn and cooked peas and stir together for another minute.
Add the soy sauce (to suit your taste) and the eggs back to the pan and give it a final stir.
Transfer to your plate and enjoy!
