Making your own soup is super easy and quick too. I was given this recipe by a friend and I've just added a couple of things to suit my tastes. It makes plenty, so you can adjust the quantities to suit or simply freeze it.
Recipe Ingredients
1 onion finely chopped
2 courgettes
1 vegetable stock cube
500ml water
1 tbsp medium curry powder
1 small handful cashew nuts (unsalted)
Salt and black pepper
Method
Fry the onion till translucent in a little olive oil.
If you have a Vitamix, you then put all the ingredients in the blender and whizz on high for 5 mins. Easy!
If you don't have a Vitamix.... once the onions are soft and translucent add the curry powder and stir together.
Add in the chopped courgettes, salt & black pepper, cashews (finely chop them) and 500ml stock into a pan and bring to a boil.
Once bubbling, turn down the heat and simmer for 20 mins.
Either transfer to a blender to smooth or use a hand stick blender, whichever you have. If you are not a fan of nuts or indeed have an allergy you can add in some creme fraiche or single cream instead of cashews before blending.
Ideal as a winter warmer lunch served with some crusty bread. Great if you are out and about and have a hot/cold stainless bottle or a flask, as it will keep hot. Enjoy!!
