Sometimes you look in the fridge and think... what am I going to eat tonight? I am usually a planner when it comes to my meals but on this occasion I looked at what I had and decided to wing it!
The Recipe Ingredients
1/2 Chorizo sausage ring
1/2 tin of Cannellini beans
3 or 4 fresh tomatoes
3 spring onions
1 garlic clove
1/2 red chilli (de-seed to suit your tastebuds)
Wholewheat Penne pasta
Flat leaf parsley
1 tbsp vegetable oil
Grated parmesan
Salt & Black Pepper
Method
Boil a saucepan of salted water and add the wholewheat pasta and cook according to instructions (usually around 10 mins).
Add the oil into a small wok style pan, on a low light. Take the outer skin from the chorizo and slice thinly and put into the pan. Fry gently for 2 or 3 minutes. When the chorizo starts to ooze its paprika colour add the garlic, chilli and spring onion (all finely chopped). Fry for 1 min.
Chop the fresh tomatoes into chunks and add to the pan with the cannellini beans. Stir well.
Lower the heat to a gentle simmer and stir occasionally. Add a couple of tablespoons of the pasta water to the frying pan and stir in. Add
salt & pepper to suit your taste.
Drain the pasta when cooked and add the pasta to the frying pan, coating all the pasta with the rest of the ingredients, then add the chopped flat leaf parsley. One final stir and you are ready to serve.
Serve into your chosen pasta dish and sprinkle with grated parmesan - enjoy!
