Chocolate Orange Biscuits


There's something about offering homemade biscuits to friends. When you open the lid of the container and that glorious smell hits you and your mouth starts to water and your friends "eeek" in anticipation.... you never seem to get that with shop bought biscuits, well, not in my experience!

These biscuits are a twist on a staple. I didn't fancy doing plain vanilla biscuits so I changed it up a bit and added the orange and the chocolate for a change. Really simple to do and lasted a week in an airtight container (mainly because I was away with work and couldn't snaffle them!)


The Recipe Ingredients

2 cups plain flour

pinch of sea salt

1 tsp baking powder

1 cup of unsalted butter at room temp

1 cup golden caster sugar

2 medium eggs

1 tsp vanilla extract

1 tbsp grated orange zest

1 bar of orange flavoured dark choc (I used lindt Orange Intense)

Method

Pre-heat the oven to Gas 3 (150C) and line your baking trays with greaseproof paper


Using a mixer, cream together the butter and sugar.

Next, add the vanilla extract and eggs and beat together till combined.


Add the flour, salt, baking powder and orange zest and mix together until you have your biscuit batter.


Using a tablespoon, drop the batter onto your lined baking sheet. Leave plenty of space between them as they do spread out a fair bit.

You can cook in a fairy cake tin too - They tend to be a little less biscuity though but it's up to you if you wish to try this. I tried both to see which worked best. I think the baking tray is best but leave plenty of room for them to spread.

Bake for about 10 mins and remove when they just start to colour.

Place on a wire rack to cool. They will harden up on cooling.

Once the biscuits have cooled down, melt your orange flavoured chocolate (I did mine in the microwave on 10 second bursts so as to not burn the chocolate) and coat the top of the biscuits.

Leave to fully cool and place in an airtight container.
